Tomato Mozzarella Salad

I love tomatoes and now is the perfect time to get them from the farmer's market.  One of my favorite farmers has some yellow supersweets.  They are the size of cherry tomatoes and are as sweet as fruit.  I bought some to have with mozzarella, but they didn't last long enough for me to put the dish together - twice now!  But if I did manage to pull it off, here's how I'd do it:


  • Tomatoes, of any variety - sliced, quartered, halved, whatever works for a bite size
  • Fresh Mozzarella - I like the cherry size balls that come in a tub with water, drained, halved
  • Salt and Pepper to taste
  • Drizzle with Olive Oil
  • Sprinkle with Balsamic Vinegar
  • Add a little thin sliced onion if you like
  • Top with fresh, torn pieces of basil
