I'm always experimenting with chicken (organic, of course) and came up with this recipe one day last summer. I had forgotten about it until I was digging through my recipe folder and thought I'd share it with you. Besides, this will help me remember to get ginger and lime the next time I go to the grocery store! Be sure to serve it with the Black Pepper and Lime Oven Fries from 101cookbooks for the perfect side!
Ginger Lime Chicken
Chicken Breast
Olive Oil
Salt and Pepper
Fresh Ginger Root (about 2”), minced
Fresh Lime, juice and zest
Line baking sheet with tin foil for easy clean up. Place chicken on baking sheet. Drizzle with olive oil, salt and pepper.
Slice or peel the skin off the ginger root and mince the root into small pieces; press into chicken breast. (When buying ginger root, break off just what you need from the bigger piece if you don’t want a large amount. The grocery store is totally cool with that.)
Bake at 425 for 25 minutes.
After baking, squeeze fresh lime juice over chicken. Top with lime zest. (Be sure to zest the lime before cutting! It's easier.)
Serve with Black Pepper and Lime Oven Fries.

It also has been used to help with digestive issues, arthritis, headaches, some respiratory issues and more.
Also in Grotto's book, he reports that limes have strong antioxidants, some which may help prevent arteriosclerosis and is a cancer fighter. Limes are loaded with vitamin C to help boost the immune system, and reduce the "risk of death from...heart disease, stroke and cancer".
