Chicken Soft Tacos

1/2 chicken breast per taco (half of a half), sliced thin (I use organic.)

Bake chicken at 425 for 25 minutes with olive oil, salt, pepper, garlic and fajita seasoning.


Red Peppers, sliced

Onion, thick sliced (red or sweet)

Coat with olive oil, salt and garlic; spread in a single layer on a baking sheet. Roast at the same time chicken is baking; 15 - 20 minutes.

Soft Taco Shells (look for the ones without partially hydrogenated oil...hard to find, but they're out there)

Mozzarella Cheese
Lettuce strips
Tomato
Greek Yogurt (or sour cream) [Greek yogurt is lower in calories and fat and overall is healthier]

Tacos are great as is, but guacamole or peach mango salsa would be fantastic along with it! And maybe a few organic blue corn chips!
