Carob Cookies

As mentioned in my previous post, here is my favorite cookie recipe!

  • 1 C butter, softened
  • 1 C honey
  • 1 t vanilla
  • 2 eggs
  • 2 ¼ C whole-wheat flour
  • 1 C bran
  • ½ C oatmeal
  • 1 t baking soda
  • ¼ C water
  • 12 oz carob chips
  • 1 C chopped walnuts or pecans (opt.)

Cream butter; add honey and beat. Add vanilla and eggs; beat well.

Mix flour, bran, oatmeal, and baking soda. Add alternately with water to butter mixture, beating well after each addition.  (Dough will be stiff.  My electric mixer works great for this recipe!)

Add carob chips and nuts.

Drop by spoonfuls onto a greased baking sheet or ungreased baking stone.

Bake at 375 for 7 – 8 minutes.  (Slightly longer if using a baking stone.)
